Sweet! Breakfast in Bed for mum This Mother's Day

It’s Mother’s Day this weekend, so we thought we’d share a few ideas on how to make the day extra sweet for that special Queen Bee in your life! Read on to discover our top three breakfast in bed recipes for mum, along with tour top suggestions for the perfect honey pairing. Enjoy!

Time to treat mum

Here at Hilltop HQ, we firmly believe that our mums should be treated like royalty every single day of the year, but its nice to have a whole day dedicated just to her too. Kids, this is your chance to shine, and to show mum just how special she really is. And what better way than with breakfast in bed?! Especially as this year, the clocks move forward on Sunday too- so hopefully these recipes will soften the blow of one less hour to sleep!

Overnight Oats

This breakfast recipe is a great one, because it can all be prepared the night before, meaning no messy kitchen for mum to come down to in the morning! It’s also super easy for kids to make, requires no cooking and can be adapted in so many ways too!

To make honey and peanut butter banana oats, all you need is:

  • 100g rolled oats
  • 300ml milk
  • 2 bananas
  • 1/4 teaspoon cinnamon
  • 1 tablespoon honey
  • 2 tablespoon peanut butter

To make the oats, simply mash the banana in a bowl with a fork, then stir in the oats, cinnamon, honey, peanut butter and milk. Mix everything really well, then transfer into two mason jars or tubs with lids. That’s it! Store in the fridge over night, then serve with an extra drizzle of honey for good measure. Delicious!

French toast

You can’t go wrong with French toast, and it’s another simple recipe that the kids can try- although make sure you supervise. To make our easy version, you only need two slices of bread, 80ml of milk, one egg and a teaspoon of vanilla extract. Mix all ingredients in a bowl, press the bread into the mixture and allow to soak in, then gently fry on a medium heat until the toast is golden brown. Drizzle with honey and serve!

You can also finish this recipe with maple syrup, or if mum is a fan of French toast, she might also like our super decadent Pancakes with Bee Pollen or our Honey & Apple Breakfast Waffles too!

Breakfast Smoothie

Smoothies are a great option for mum- packed with fruit and veg, easy to drink (while the kids no doubt clamber all over!) and easy to make too. Simply fill your blender cup with ice, a handful of spinach and some milk or water, then top with frozen berries, a drizzle of honey and blend. Easy peasy!

Get creative!

All of the above recipes can be adapted to suit mum’s taste, so get creative! We highly recommend experimenting with different honeys to find the one that the whole family likes best.
