Summer Harvest Quinoa Salad

This flavourful salad is filled with Hilltop honey, lemon, pea shoots, cooked quinoa, sweet potato chunks, strawberries and avocado. A meal that is filling and very appetising.

  • 2 tbsp olive oil
  • 1 tbsp Hilltop Honey
  • Juice from half a lemon
  • Sea salt and pepper
  • 2 handfuls of pea shoots
  • 1 cup cooked quinoa
  • 1 cup roasted sweet potato chunks
  • Large handful chopped strawberries 1/2 medium-large avocado


  1. Mix the olive oil, honey, lemon juice, salt and pepper together in a jar to create your dressing and set aside.
  2. To assemble your salad bowl, layer the pea shoots, cooked quinoa, strawberries, sweet potato chunks and avocado. Drizzle with the dressing then simply toss!
