Ingredients
2 large duck breasts with skin
salt and pepper
400 ml orange juice
4 garlic cloves

100 g Hilltop Honey
Directions
Pre-heat to oven to 175c
Pat dry the duck breasts. Placing them skin side up, carefully, cut a criss cross pattern in the skin
Place the duck breasts into a pan, skin side down, on a medium heat
Cook for 10-15 minutes, pouring off excess fat regularly, until the skin is golden and crisp
Turn the breasts over, to skin side up, quickly sear and raise the heat to med-high for 1 minute
Transfer the duck breasts, skin side down, to a baking tray
Glaze the duck breasts with the orange sauce and cook for 5 minutes
Remove from the oven and allow to rest for a few minutes before slicing and serving
Place the pan over heat, with some of the duck fat, add in the orange juice and honey
Using the side of your knife, crush the garlic cloves and add to the pan
Place the pan over a medium heat, for 10-15 minutes, until reduced by half
Once reduced, remove the garlic gloves
