What is more festive than this gooey gingerbread cookie skillet? We know you wont be dissapointed with the taste of this one!

- 40g blended oats
1tsp ground ginger and mixed spice
1/2tsp baking powder
1tbsp Coconut Yoghurt
1tbsp crunchy peanut butter
1tbsp Hilltop maple syrup
1/2tbsp biscoff spread
200ml unsweetened milk
2 mini ginger men
1/2 crushed ginger biscuit
a sprinkle of cinnamon
mix your oats, spices, flaxseed and baking powder together then add in your peanut butter, maple syrup, yog and your milk. Mix until fully combined.
pour half into your skillet, put your biscoff spread in the middle and top with the other half.
top with your gingerbread men and crushed ginger biscuit. Bake for 20-25mins until golden.
leave to cool for a few mins then top with your coconut yog and more cinnamon.
