Who doesn't love a cookie? These breakfast beauties are not only delicious but they're full of all of the good things you need to start your day right!

Ingredients
- 160g oats
- 80g salted caramel protein powder
1tbsp flaxseeds
- 1tbsp hemp seeds
- 1tbsp mixed spice
- 1tbsp ground ginger
- 1tbsp cinnamon
- 1/2tsp baking powder
- 1 small apple- finely grated
- 1tbsp salted date peanut butter*

1tsp Hilltop Honey maple syrup
- 50g light coconut yogurt
- 80ml unsweetened milk
Directions
Preheat your oven to 180*c and line a baking tray.
Mix together your oats, protein powder, seeds, spices and baking powder.
Then mix in your apple, syrup, peanut butter and yoghurt. Slowly pour in your milk (you may need more/less) and mix until fully combined and you have a cookie dough.
Roll into 8 balls, put on your baking tray and flatten with a spoon.
Bake for 12-15 mins until golden brown.
