Crêpes are probably our favourite quick and easy sweet breakfast treat.

1 cup all-purpose flour.
¼ teaspoon salt.
2 large eggs.
1 cup whole milk.
¾ cup sparkling water.
3 Tablespoons unsalted butter melted and slightly cooled.
Canola oil or additional melted butter for the pan.

Sift or whisk together flour and salt in a large bowl to break up any clumps. Make a well in the centre and add eggs, milk, sparkling water. Whisk until smooth. Add melted butter whisk well.
Cover and set aside for 30 (This allows the bubbles to escape from the batter and makes the crepes less likely to tear when cooking).
Fry the pancakes in a well-heated pan with a thin bottom, e.g. a pancake pan.
- Flip to the other side when the bottom of the pancake is nicely browned and cut.
Serve with fruits or your choice, honey or whipped cream or lemon curd.
