2 skinless salmon fillets
1 tbsp olive oil
salt and pepper
2 tbsp Hilltop Honey
1 tbsp lime juice, freshly squeezed
2 tbsp coriander, fresh, chopped
Preheat oven to 190°C/170°C fan/gas 5.
Pat dry salmon. Brush 1 tablespoon of olive all over the salmon, covering all sides
Season salmon with salt and pepper, as desired
Place the salmon in a large piece of foil. Folding sides and ends up, tall
Place the salmon, in foil, on a baking sheet
In a small bowl combine the lime juice, Hilltop Honey and Coriander. Mix to combine and pour mixture over the salmon
Place the salmon, uncovered, into the oven and bake for 15-20 minutes
Remove the salmon from the foil and place on serving plate
Carefully take the remaining sauce from the foil, or tray, and pour over the salmon
Serve up with, rice or new potatoes and your favourite greens – enjoy!
