This classic American Pancake stack is quick and easy to make. The pancakes are light and fluffy, making them the ultimate Pancake Day centrepiece.
Tips for perfect fluffy pancakes: Let the batter rest for 5 minutes before cooking to help the baking powder activate and create extra lift. Serve immediately with Hilltop’s rich and naturally sweet maple syrup for the best classic breakfast experience.
250g plain flour
2 tbsp caster sugar
2 tsp baking powder
½ tsp salt
2 large eggs
300ml whole milk
60g melted butter (plus extra for the pan)
1 tsp vanilla extract
Hilltop Maple Syrup to serve
Optional toppings: fresh berries, sliced bananas, Greek yoghurt
In a large bowl, whisk together the plain flour, sugar, baking powder and salt until well blended.
In a separate jug, beat the eggs with the milk, melted butter and vanilla extract.
Pour the wet mixture into the dry ingredients and whisk gently until just combined.
Heat a non-stick frying pan over medium heat and brush with a little melted butter.
Pour about 60ml of batter per pancake into the pan. Cook until bubbles form on the surface and the edges look set (about 2 minutes), then flip and cook for another minute until golden and risen.
Stack warm pancakes on a plate and generously drizzle with Hilltop Maple Syrup. Top with berries or banana for extra flavour.
