Candy the walnuts: In a small pan over medium heat, toast the walnut halves for 2–3 minutes until fragrant.
Drizzle in a little Hilltop Blossom Honey and a pinch of sea salt, stirring until coated and slightly caramelised.
Transfer to parchment paper to cool and harden.
Assemble the bites: Place a crumble of blue cheese onto each cracker or brioche toast.
