Crispy Flatbread with Parma Ham, Pear & Spicy Honey Butter

Crispy Flatbread with Parma Ham, Pear & Spicy Honey Butter

Ingredients

    • 1 tbsp Hilltop Hot Honey

    • 1 garlic clove, finely grated

    • Fresh thyme & coriander (a few sprigs each)

    • 1 tbsp finely diced red onion

    • Pinch of salt

    • 100g unsalted butter, softened

    • 4 heaped tbsp self-raising flour

    • 3 tbsp natural yoghurt

    • Pinch of salt

    • 1 ripe pear, thinly sliced

    • 100g mozzarella

    • Prosciutto or parma ham slices

    • Rocket

    • Fresh basil & mint

    • Zest and juice of half a lemon

    Directions

    1. Pour Hilltop Hot Honey over the garlic, herbs, and red onion in a small bowl and let it infuse for at least a few hours, or overnight for full flavour. The next day, blend with softened butter and season to taste.
    2. To make the dough, combine self-raising flour, yoghurt, and a pinch of salt. Knead lightly, divide into portions, and roll into flat rounds.
    3. Cook each flatbread in a hot, dry pan until puffed and golden on both sides (about 2–3 minutes per side). While still warm, brush generously with the hot honey butter.
    4. Top with torn mozzarella, sliced pear, and prosciutto. Finish with rocket, herbs, lemon zest and juice—and if you're like us, a final drizzle of hot honey.
