Hive's Best Honey Loaf

Ingredients

  • 200ml Hilltop Blossom Honey
  • 150g light brown sugar
  • 3 whole large eggs
  • 150ml sunflower oil
  • 300g plain flour
  • 2 tsp of cinnamon
  • 3/4 tbsp of baking powder
  • 1 tsp of baking soda
  • 200ml strong black English breakfast tea
  • Flaked almonds, to garnish the loaf

  • 150ml double cream
  • 1 tbsp icing sugar
  • 3 tbsp honey

Directions

  1. Brew your tea and leave to cool. Whisk eggs and sugar together until nice and frothy. Slowly pour in the oil whilst also whisking in the honey.
  2. Sieve in the dry ingredients and stir until well-combined. Slowly add in the tea and pour the batter into a greased loaf tin.
  3. Scatter over flaked almonds and bake at 170° for 45 minutes.
  4. Leave to cool slightly before turning it out of the tin.
  5. We like to serve ours with honey drizzled over the top and a honey cream. For the honey cream, simply add the ingredients together and whisk until it forms soft peaks.
