Lemon and blueberry is actually such a great combo and muffins for breakfast is just a great way to start the day😍

Ingredients
150g oat flour
50g self raising flour
50g vanilla protein powder
1tbsp flaxseed & 1 tbsp chia seeds
1/2 cup blueberries
Zest of 1 lemon
1tbsp lemon juice
1tsp baking powder and cinnamon

Hilltop Very Dark Maple Syrup
50g blueberry yogurt
200-250ml unsweetened milk
1tbsp peanut butter
30g melted coconut oil

For the toppings:
Directions
Mix all of your dry ingredients together then add in your wet ingredients.
Mix until you have a smooth, thick cake batter.
Spoon your mix into each muffin tin, top with some blueberries and bake for 22-25 mins.
Serve with blueberry yogurt, granola and a drizzle of @hilltop_honey maple syrup.
