What's the cosiest way to start your day? With a stack of pumpkin pancakes, of course! This recipe will quickly become a staple in your fall breakfast rotation.

Ingredients
- 3 eggs
- Splash egg whites
- 2 tablespoons Psyllium husk powder
- Heaped Spoonful pea protein powder
- Teaspoon baking powder
- Pinch sea salt
- Around 1/2 pumpkin purée
- Blob Kefir yogurt
- Splash Kefir milk
- Squeeze lemon juice
- Hilltop Amber Maple Syrup
- Splash water
Directions
- Place all the ingredients into a mixing bowl. Make sure the mixture is nice and smooth so it will cook through better.
- Keep the maple syrup separate for now.
- Get a frying pan, pre heat the hob and place some butter or oil into the pan.
- Once slightly warm, pour a ladle size of the smooth pancake mixture into the pan.
- Allow to cook 1-2 minutes on each side and prep aside to cook the rest.
- Once all the pancakes are ooked, set on a plate.
- Pour a generous amount of maple syrup and enjoy!
