Welsh Honey Loaf Cake

Simple but so fluffy, Welsh Honey Loaf Cake! - it’s lightly spiced and finished off with a simple orange icing.

120g Baking Spread.
120g Hilltop Welsh Blossom Honey.
80g Light Brown Sugar.
2x Medium Eggs.
225g Self Raising Flour.
1/2 tsp Bicarbonate of Soda.
1.5tsp Cinnamon.
1/4 tsp Ginger.
Dash of milk.
1 cup icing sugar.
Boiling Water from the Kettle.
1/2tsp Orange Extract.
Preheat your oven to 160 degrees and line a medium loaf tin.
Cream together your baking spread, sugar and Hilltop Welsh Blossom Honey.
In a separate bowl, sieve together the flour, spices and Bicarbonate of soda.
Add an egg and half the dry mix to the butter, sugar and honey, and mix together.
Add the second egg and the remaining dry mix.
Transfer all the mix to your loaf tin and bake for around 35 minutes (or until a skewer comes out clean).
Once baked, place on a wire wrack in the tin, after 15 minutes, remove the cake from the tin and allow to cool fully.
Once fully cooled. Prepare your Icing.
Put your icing sugar in a bowl, and add dashes of boiling water and mix, until it reaches a runny consistency (but not too thin).
Add the orange extract, and using either a piping bag or a spoon, drizzle the icing over your cake.
Enjoy with a cup of tea in the garden!
