There’s nothing quite like handmade pancakes on a slow morning. Golden, soft, and stacked high, they’re a cosy kitchen ritual. No boxed mixes here, just real ingredients, whisked by hand and flipped with care. Comfort food made the proper way.
Handmade pancakes are exactly that — made from scratch, by you. With just a few simple pantry staples, you can create pancakes that are light, fluffy, and full of homemade goodness. Make them thick or thin, round or rustic — it’s all part of the fun.
2 egg whites
2 tbsp Hilltop Blossom honey, lightly warmed
100ml double cream
First, whisk the egg yolk mixture together. In a bowl, whisk together the egg yolks, milk, flour, and baking powder until smooth.
Make the meringue - In a clean bowl, whisk the egg whites with lemon juice and salt for 2–3 minutes until foamy. Gradually pour in the honey and continue whisking until stiff peaks form (about 5 minutes).
Combine mixtures - Fold the meringue gently into the yolk batter. Don’t overmix, you want to keep the air in.
Preheat and cook - Heat a non-stick pan over low heat with a drizzle of oil. Spoon in one generous dollop of batter per pancake. Cover and cook for 6–8 minutes.
Build the stack - Add another small spoonful of batter on top for extra height if you like. Cover again for 2 minutes, then carefully flip.
Steam for softness - Add a few drops of water to the pan, cover with the lid, and steam for 6 more minutes.
Whip the topping - While the pancakes cook, whip the double cream with honey until it holds soft peaks.
Serve - Stack your homemade pancakes, top with whipped honey cream and fruit, and finish with a final drizzle of Hilltop Blossom Honey.
Pancakes are the perfect base for all kinds of toppings.
Try:
Classic – Butter and maple syrup
Fruity – Fresh berries, banana slices, or stewed apples
Sweet tooth – Chocolate chips, whipped cream, or a drizzle of Hilltop Honey
Nutty – A spoonful of peanut or almond butter
Let the batter rest for 5 minutes before cooking for extra fluffiness
Don’t press them down with the spatula — let them rise
Make ahead & freeze – They reheat beautifully in the toaster
Fridge: Store in an airtight container for up to 3 days
Freezer: Stack with baking paper between each and freeze up to 2 months
Reheat: Use a toaster or microwave to warm them through
Handmade pancakes are simple to make and always satisfying. Whether it’s a lazy weekend morning or breakfast-for-dinner kind of day, they’re soft, fluffy, and always made better with a drizzle of honey.
Once you’ve flipped your own from scratch, there’s no going back.
