These would be SO GOOD warm and with ice cream or custard!

Ingredients
- 3/4 cup brown sugar
- 3/4 cup unsalted butter
- 1/2 cup Hilltop Cut Comb in Acacia Honey
- 2 apples chopped
- 2 cups self raising flour
- 3 eggs
- 1 cup caster sugar
- 1 cup vegetable oil
- 4 tbsp full fat Greek yogurt
- 1 tsp vanilla extract
- Sprinkle of cinnamon
- Sprinkle of all spice
Directions
Preheat the oven to 180C.
Slowly melt the butter, brown sugar and honey in a saucepan, (I added some cinnamon here too if you fancy) then set aside to cook a little.
Chop the apples and then add to the butter and sugar mixture.
Whisk the eggs, caster sugar, oil, Greek yogurt and vanilla together until smooth.
Add the flour and mix again.
Optional - I then added a little extra drizzle of honey, some cinnamon and some all spice for extra Christmassy flavours.
Pour half the apple caramel mixture into the batter and stir well.
- Spray the tin with oil and then share the mixture out between each tray.
Cook for 20 mins.
Leave to cool and then drizzle the remaining apple caramel mixture over the cakes and enjoy!
