Chilli honey is regular honey infused with chillies. It’s sticky, spicy, and just the right kind of fiery. The sweetness of the honey tempers the heat, creating a flavour that’s layered and complex — sweet at first, then a warm, lingering kick. 1 cup of your favourite honey

1 tablespoon crushed red chilli flakes or 1–2 whole dried chillies

Optional: a splash of apple cider vinegar for a bit of tang
Directions
Warm the Honey - Pour the honey into a small saucepan and gently warm it over low heat. Don’t let it boil — just a gentle heat to help the flavours mingle.
Add the Chilli - Stir in the chilli flakes or whole dried chillies. Let it simmer on low for 5–10 minutes, tasting as you go to find your perfect heat level.
Cool and Strain (optional) - Turn off the heat. Let the honey cool for about 10 minutes. If you used whole chillies, strain them out for a smoother pour.
Bottle It Up - Pour into a clean, airtight jar. It’ll keep in the pantry for months.
