These Coffee Cake Pancakes have all the delicious flavours a classic coffee cake has to offer but served up pancake-style.

- 60g protein pancake mix
- 110ml almond milk
- 1 coffee shot (1tsp instant coffee mixed with a dash of boiling water)
Dash of cinnamon
- Smooth almond butter
- Pecan & almond granola
- Hilltop Everyday Blossom Honey
Mix all of these together well until a smooth batter is formed.
- Heat a non-stick pan to medium heat and spray with some oil or grease with butter.
Add tablespoon sized amounts of the batter (for small pancakes) and cook until bubbles form on top then flip.
- Cook on the other side until it’s golden on both, and then transfer to a plate.
Continue making pancakes with the rest of the batter.
