Crispy Rice Paper Dumplings

The creamy peanut butter dip is made from 3 ingredients so it’s super easy to put together and not full of ingredients you can’t pronounce!

Crispy Rice Paper Dumplings

Ingredients

    • 2 medium carrots
    • 1 broccoli stem
    • 1 thumb size piece ginger
    • 2 tsp garlic
    • 2 chillies
    • 5 mushrooms
    • 2 baby red peppers/1 bell pepper
    • 1 leek
    • 1 tsp Chinese 5 spice
    • Pepper
    • 2 tbsp soy sauce
    • 1 tbsp vegan oyster sauce

    • 3 tbsp peanut butter
    • Juice of half a lime
    • 1 tbsp Hilltop Very Dark Maple Syrup
    • Water to thin

    Directions

    1. Fry your garlic, ginger and chillies in a little oil and once it’s golden add your broccoli stem and carrots. Once they are soft add all your other veggies and cook. I kept the lid on so they would cook faster.
    2. Add all the spices/seasonings and mix well.
    3. Dip your rice paper into water and let it get soft. Put it down and add your fillings to the middle. Fold to form a little pocket. Brush with a little bit of oil and pop into the airfryer until it is nice and crispy.
    4. Combine all the ingredients for the dip. Keep stirring your peanut butter dip until it becomes nice and creamy.
    5. Enjoy while warm!
