Grilled Sweet Chilli Halloumi
Why have Halloumi on it's own when in just 30 minutes you can add chillies, honey, quinoa and rocket to make it into a healthy and satisfying meal.
3 red chillies
1 lime (halved)
1 block of Halloumi (sliced)
Slice lime in half and squeeze juice into a bowl
Slice chillies, leave the seeds in
In a small pan add the chillies, honey and 1 tsp of lime juice
Using your smallest hob, bring the pan to a bubble
Turn the heat down low and allow to foam, stirring often
Remove from the heat
Heat a heavy based frying pan
When hot, add the halloumi slices
Allow to cook for 30-60 seconds then turn over
The slices should appear, striped and bronzed
Serve over quinoa, in wraps or simply enjoy as a squeaky snack!
