These rice paper rolls are a staple in a go-to lunch and dinner recipes! They are so refreshing and nourishing and this peanut & maple syrup sauce is honestly so addicting.

Ingredients
- Rice paper rolls:
- Cooked chicken breast sliced (or you can try prawns or tofu)
- Shredded lettuce
- 1 small carrot peeled and thinly sliced
- 1/4 cucumber thinly sliced
- 1 sprig spring onion thinly sliced
- 4 sheets of rice paper
1 1/2tbsp smooth peanut butter (we highly recommend ManiLife peanut butter)
- 1/2 tbsp soy sauce
- 1/2 tbsp apple cider vinegar
- 1/2 tbsp Hilltop Amber Maple Syrup
- 1 clove garlic finely diced/minced
- 1tbsp of water if needed to thin out (you can add more of less depending on how thick or thin u want the sauce to be)

Directions
- To assemble, dip the rice paper in some water for a couple seconds and lay down flat.
- Add all the veg and chicken, and roll by tucking in the sides and rolling tightly.
- Mix all the sauce ingredients together and make sure it has a smooth consistency.
- Dip the rolls into the sauce and enjoy!
