Spring Green Salad

A fresh and vibrant Spring Green Salad bursting with crisp greens, seasonal veggies, and a light, zesty dressing—perfect for a refreshing and healthy meal.
1 celery stick, sliced
2 shallots, sliced
3 garlic cloves, sliced
250g asparagus
1 tsp dried tarragon
250g feta
1 tsp dijon mustard
2 tbsp Hilltop Blossom Honey
50ml olive oil
Toasted ciabatta and Blossom Honey
First, gently cook the shallots and garlic together in a glug of olive oil, until soft, then leave to one side to cool.
Trim the asparagus but keep the trimmings, put them and the tips into the garlic frying pan and fry gently for 5 minutes until cooked.
To make the dressing, mix the lemon juice, mustard and honey together then slowly add the olive oil, whisking as you go.
Season to taste then pour over your salad.
