Vegetarian Carrot Cake
This egg-less carrot cake is insanely delicious! It's moist, flavourful, fluffy and also super easy to make in just 30-40 minutes.

- 100 ML coconut milk
- 2 oranges
- 2tbsp vegetable oil
Cup oat flour and half cup regular flour
- Hilltop Manuka Honey MGO50+ to taste
- 1 tsp baking powder
Sprinkle of salt
- 1 tbsp ground cinnamon
- 1 tbsp ground ginger
- 1 tbsp ground nutmeg
- 1 large carrot
Preheat oven to 180 degrees Celsius.
Add coconut milk and fresh orange juice to a jug.
Measure flour into mixing bowl.
Add Hilltop Honey, spice, baking powder and salt to the flour and mix well.
- Now add the grated carrot.
Fold the carrot into dry ingredients.
Add oil to the milk mixture, then pour the wet ingredients into the dry ingredients.
Fold in until just combined.
Add to your baking tin and bake for 30 to 40 minutes.
Top with your favourite toppings.
